I made the Vietnamese salad tonight that I was talking about below! I bought all of the ingredients at the Farmer’s Market today, in some light rain, we were on a mission. I love the Farmer’s Market, the only tricky thing is if you have a specific list, its sometimes hard to find everything. We did have to stop at the regular store on our way home to pick up a few more items. 

The salad is so YUMMY! It did take some time to clean, prep and chop all of these vegetables but it was well worth it.  Its the perfect crunchy, salty and sweet salad.  We also picked up some salmon today which Ty grilled and we had with it. We both feel so healthy!

I highly suggest making this salad! I cut the recipe in half for two people and it was the perfect amount.
